What is a Tequeño?

The tequeño is one of the most beloved and iconic foods in Venezuela, often affectionately called the “Venezuelan cheese stick” or “cheese finger” (deditos de queso). It is a delicious, simple pastry consisting of:

 
  • The Filling: A stick of semi-hard, white artisan cheese, traditionally Queso Blanco (or queso para freir / frying cheese). This cheese is key because it gets soft and warm when cooked but doesn’t completely liquefy and ooze out like mozzarella.
     
  • The Dough: A thin, slightly sweet, and buttery wheat flour dough.
     
  • The Preparation: The dough is cut into strips and meticulously wrapped in a spiral fashion around the cheese stick, completely sealing the filling. It is then deep-fried until golden brown and crispy, or sometimes baked/air-fried.

Origins and History

 

The precise origin is shrouded in culinary legend, but the most widely accepted theory traces the tequeño back to the city it is named after: Los Teques, the capital of Miranda state, near Caracas.

 
  • The Báez Family Legend (Early 20th Century): The most popular tale credits the Báez family, a wealthy and prominent family in Los Teques, with its creation. The sisters in the family, or their cook, are said to have used leftover dough and cheese to create the “cheese rolls” (quesitos enrollados). The delicacy gained popularity as a party favor and, later, when it was transported to Caracas, people at the train station would shout, “The Tequeños have arrived!” referring to the people from Los Teques and their famous snack.
     
     
  • Naming: The name “Tequeño” eventually stuck, in honor of the city of Los Teques where the treat was popularized.
